Wasabi Ribs with Peach-Ponzu Glaze Recipe!

 We have a new recipe for you and it so very good!

 Wasabi Ribs with Peach-Ponzu Glaze

1 rack of pork ribs

2 Tbs Oregon Coast Wasabi Seasoning Salt/Rub

2 Tbs white miso paste

2 Tbs brown sugar

2 Tsp soy sauce

¼ cup orange juice

I.5 cups very ripe peaches, diced

1/3 cup ponzu

Pinch of red pepper flake

Splash of water

 For the ribs:

Preheat oven to 250 degrees

In a small dish combine Wasabi Seasoning, miso, brown sugar, soy sauce and orange juice, mix to make a thick paste. Add more orange juice if too thick to spread (should be smooth, not crumbly).

Apply wet rub to meaty side of rib rack and wrap in foil. Place ribs on a sheet pan and into the oven for about 4 hours (until very fork tender).

 For the glaze:

While the ribs are cooking, combine peaches, pepper flakes and ponzu in a blender or food processor. I did not peel my peaches, it’s a personal preference. Blitz into a puree and pour into a saucepan. Use a splash of water to “rinse” the last of the peachy goodness out of the appliance and add to your pan. Heat puree on the stove until bubbling and then reduce to a simmer. Leave uncovered so the mixture will reduce and thicken. Stir occasionally. This will take about 20-30 minutes or so and you will have ¾ cup at the end. Put glaze aside, cool then cover, until ribs are done cooking.

 Assembly:

Once the ribs are tender, pull them out of the oven and crank the heat up to broil. Open the foil packet but leave the ribs on the foil atop the sheet pan. Apply a thin coat of glaze to the ribs and broil until shiny/crisp (usually just a few minutes, watch closely!). Serve with extra glaze on the side.
